How To Make Eggplant Parmesean in a Pizza Box Solar Cooker

In attempting to make eggplant in a pizza box solar cooker, Carrie and I met with disappointing results, and ended up cooking it in the oven.
The food turned out absolutely delicious, but it wasn’t because the cooker actually worked.
I think I figured out what we did wrong though, and look forward to sharing it with you in another video!
For now, you can learn how to make some really yummy eggplant Parmesean, which, curiously enough, uses mozzarella as the primary cheese and parmesan is just a secondary topping at the end.
This was totally delicious though. I’m getting hungry for some more just typing about it!

LOL, I got frustrated watching seeing all that aluminum foil and no black vessel or black interior, I knew it wouldn’t cook. Glad you figured out you needed more black. Use a black vessel, and get some craft acrylic flat black or flat black tempura paint to paint the foil on the inside of the oven. Pizza box ovens don’t have enough room to really cook casserole dishes. You can cook cookies on a black cookie sheet alot better.
Great try though! try to build a big box oven, they’re great!



Yes you made 2 mistakes:
1. Wrapping the food in foil would reflect the light and heat away from the food preventing it from cooking.
Probably would have cooked a whole lot better in a glass dish.
2. There was no way anything will cook in your pizza solar oven without something black to absorb the heat.
This is the first mistake I made when I made my first solar oven over a decade ago.
