Chicken dish last night, and the family loved it. I
don't have a solar oven, so in trying to simulate what I
think it does, I used a 9' x 9' stoneware baking dish,
then covered and sealed it with aluminum foil. The last

When Jackie introduced me to solar
cooking last year, I was fascinated. I got a solar
oven immediately. Now I have two. Solar cooked food
tastes so much better. It's fun to experiment with the
recipes, too. We live in the mountains off the grid, so
now we can save our solar-generated electricity for

conventionally because the gentle, even heat develops the full
flavor of your food.
Food doesn't stick to pans, foods cook evenly and juices stay
intact. Best of all, the solar heat retains vitamins and
minerals, so the food you eat is nutritious and flavorful.
In many places, solar ovens are used all year around, but even
in cold climates, if you live below Juneau, Alaska, or north of
Antarctica, a solar oven is for you.
In this book, you will learn all you need to know about the
basics of solar cooking: recipes for meat, fish, poultry, bread,
fruits, vegetables, deserts and convenience foods.

Mediterranean Chicken Breasts |
Here's another example of how
sunshine can transform your food from ho hum to
excellent. This recipe comes together easily, and it's
good enough to serve at a dinner party, with a nice
bottle of red or white wine. Make sure the friends with
whom you enjoy this can handle dipping bread in sauce.
4 boneless, skinless chicken breasts
2/3 cup sun dried tomatoes, packed in oil
1 medium onion, sliced
3 cloves garlic, crushed
� teaspoon dried basil
� teaspoon dried oregano
1/3 cup kalmata olives
� cup freshly grated Romano, parmesan, or asiago
cheese or crumbled feta
Wash chicken breasts and put in bottom of solar pan.
Spread the remaining ingredients (except cheese) on top
of the breasts. Bake in solar cooker for an hour, add
cheese, and finish cooking, until the pan juices come to
a simmer. This creates a luscious broth, and must be
served with crusty French bread for dipping into this
delicious sauce. |

Jackie started cooking in late childhood, and while life took her on other paths, she never lost her enthusiasm for bringing delicious meals to the table for family and friends.
She seldom used recipes, even at a young age, preferring to make up her own.
Then she found solar cooking.
This brought a whole new dimension to cooking good
food. Finding a lack of comprehensive solar cookbooks on
the market led her to put this cookbook together, to share the wonder of cooking with the sun with others.
Her first loves have always been cooking and protecting the environment. She is a former member of the Maricopa County Water Quality Advisory Board, the Laguna Beach Chamber Music Society Board of Directors, and has worked on clean air issues in the Phoenix metro area.
Jackie spearheaded the early efforts of the Central Arizona Homebuilder's Association to adopt water-saving landscape techniques in new home subdivisions.
